Dining out can be a mini vacation depending on the experience. How about we start calling it an eating-cation? Is that a thing yet? Well, if it isn't, it will be for those who have discovered the restaurant, Flame and Fire. With it's unique style of service, its ambiance and it's AMAZING food, dining at Flame and Fire is more than a meal, it's an experience!

Relatively New in Roseville and Three Centuries Old

Flame and Fire is a Roseville restaurant practicing the centuries-old Brazilian style of cooking called churrasco. Churrasco is the Portuguese term for meat that's cooked over fire, sort of. I speak Portuguese fluently and can say with certainty the term translates loosely into barbeque (the verb) and that churrascaria the Portuguese word for steakhouse. The style of service at a churrascaria is called rodizio which translates to rotation. Now I know this might get confusing but that isn't referring to the fact that the meat being cooked over an flame is rotating on a skewer but rather the wait staff serving the meat is rotating from table to table with the meat. Okay, I've now nailed down the mechanics of the restaurant and haven't mentioned that the overall practice of this style of eating is over three centuries old. Enter the gauchos!

Gauchos, a self-appointed name for South American cowboy, began the technique of fire-roasting the first Brazilian churrasco as part of a camp-site feast. Everything I read about the history of this style of food agrees with that much. But there's lack of agreement over whether the food was rib-eye or beef-ribs. I'm just curious about why it couldn't be both. Okay, no wandering away from the main camp here, I'll go back to the point of origin which is churrasco. Regardless of the cut of meat cooked, the origin is campfire cooking over 300 years ago by Brazilian cowboys.

Abundance is All Aspects of Dining

Flame and Fire is a dining experience that can also be called a meat-lovers paradise! Here's why. The Rodizio service (of rotating throughout the dining room) offers all-you-can-eat grilled meats. Ranging from chicken, lamb, pork and beef, each serving is brought to you and carved tableside. So, in theory, you can have a meal made up entirely of meat. That’s a meat-lover's paradise, right? For those that want to add sides, there's what's called the Market Table and Hot Side Bar. Those contain amazing selections of gourmet salads, hot and cold Brazilian specialties, charcuterie and cheeses. But it gets even better!

If there's any need to add a little something to their Rodizio dinner or Tomahawk steak there's…wait, did I fail to mention instead of the Rodizio meal you can have a Tomahawk steak? Yes, you can. It makes sense that, in a restaurant built for meat-lovers, there would be a Tomahawk steak offering. The Tomahawk steak is recognized as a symbol for culinary extravagance. Why is the Tomahawk steak such a big deal? Read on.

Exceptional Quality

Tomahawk steaks are prime-grade or Wagyu beef which are renowned for its exceptional marbling and tenderness. The quality of the meat apparently provides a rich, buttery flavor and texture that melts in your mouth. Oh, did I mention its 32 ounces? Yes, it is. When ordering a Tomahawk steak, you're ordering two pounds of beef and because it requires both skill and artistry to do it justice, it's not your everyday steakhouse's steak.

Now back to the little added something to go with the Rodizio dinner or Tomahawk steak, there are other menu items. There's jumbo shrimp with lobster stuffing served with a red pepper cream sauce. Or if you'd rather have scallops, those are served wrapped in bacon with house aioli. For a non-protein side, there's the grilled artichoke served with house aioli or the buffalo queso battered cauliflower served with house ranch and celery. And finally, one more choice of protein, there's a jumbo grilled shrimp with house garlic butter.

 Variety Among the Greats

I mentioned that the usual greats (beef, pork, chicken) are served and now I'd like to say how the recipe is used. Please check online to see what's being served for the day as this may change. For example, some are served for dinner only while others are served at both dinner and lunch. Check first so you don't get your heart set on something that's not available at the meal of your choice.

Beef is filet mignon either regular or bacon wrapped, pork ribs or parmesan, bacon wrapped chicken breast or chicken parmesan, lamb chop, top sirloin, leg of lamb, Brazilian sausage, pork tenderloin.

While I'm not naming everything that’s part of the Market Table and Hot Side Bar, here are a few interesting things to try. Feijoada are beans cooked Portuguese style, sweet fried bananas are well, bananas that are fried and sweet, Brazilian pasta and Brazilian potato salad. These salads have peas, corn, diced ham bits of fruit. Of course, there's much more including a full cheese and charcuterie selection. But the fun doesn't end there because there's dessert! Diners who still can eat anything after their meal, it's worth noting that the dessert is equally as substantial and impressive as everything else served.

Sweeeeeeeeeeeeeeeeeeeeeet!

Desserts at Flame and Fire do not disappoint. Brigadeiro is a lovely creation for those who love chocolate. These are bite-sized balls made of cocoa, butter and condensed milk. There's passion fruit mousse and Brazilian flan, which is a simple, but out-of-this-world creation made of eggs, whole and sweetened condensed milk and granulated sugar. Of course, can you possibly have a worthy dessert collection with cheesecake? No. So, Flame and Fire has a Brazilian cheesecake. And some would say I buried the lead here but just to mention, Flame and Fire has a amazing full bar as well as an impressive collection of wine and beer. So that's it. If you're not licking your chops and reaching for your phone to make reservations at Flame and Fire right now, I bet you will soon.
